CV BBQ runs open-pit barbecue out of a single location in Indio and serves the Coachella Valley from it — Palm Springs, Desert Hot Springs, Cathedral City, Rancho Mirage, Palm Desert, Indian Wells, La Quinta and Coachella among the cities it names. It is both a restaurant and a caterer, open for lunch Tuesday through Saturday, and the catering operation runs out of the same kitchen.
The business says it has been named Best of the Desert three years running, across four categories — best BBQ, best catering, best lunch and best ribs. The signature item is tri tip, dry-rubbed in the house seasoning blend, and on larger events it is carved to order at a dedicated station with a slicer rather than portioned in the back.
Three service types: pick-up, delivery, and full staffed. The distinguishing fact, and the business states it plainly, is that all food is prepared and cooked at the CV BBQ kitchen — on full service the team delivers, sets up, and its staff work the line at your event, then breaks down the buffet and cleans the service area. The standard catering package carries an 18% service fee, which the company states explicitly is not a gratuity. Delivery is a separate proposition: a minimum food order of $650 plus tax, a $35 delivery fee, 48 hours notice, food arriving in disposable tin trays arranged on a table you provide, and neither chafing dishes nor on-site staff included. Pricing is a-la-carte throughout, with no per-person package rate. Meats are by the pound — tri tip at $23.95, pork baby back ribs at $20.00, and linguica, grilled chicken and pulled pork each at $18.95. Salads and signature sides come as trays serving 20 to 30, from $75 to $120, and corn is $6.00 an ear with dinner rolls and garlic bread at $15.00 a dozen. Appetizers are mostly per person, from bruschetta at $4.50 to shrimp ceviche with chips at $12.50, with pulled-pork sliders at $6.00 each on a minimum order of fifty and a guacamole platter at $70.00. Extras are outside the standard package and priced on request.
