Dads BBQ began in 2014, when Don Martinez started competing in barbecue cook-offs across several states — contests run by the Kansas City Barbecue Society, the California Barbecue Association and the International Barbecue Cookers Association — and the family turned the competition habit into a catering business. It is still run by the Martinez family: Don as pitmaster, Pearl handling sides and desserts, Rianna as sous chef.
The cooking is slow and the site is specific about it: brisket and pulled pork smoked for over fourteen hours on a blend of oak and hickory, tri tip marinated for twenty-four, turkey breast smoked for four and finished in butter. There is no storefront. What there is instead is a smoker trailer, and on the premium tiers it comes to the event.
Four service levels, and the pricing is published in full. Drop-off and full setup with chafing pans both carry a 25-guest minimum and run $21.99, $24.99 and $27.99 per person for one, two or three meats with two sides and rolls. The on-site smoker trailer raises the minimum to 75 guests and the price to $24.99, $27.99 and $30.99, with 1.5 hours of service included and additional hours at $150. Full service with staffing is $31.99, $33.99 and $35.99, also 75 guests and 1.5 hours, with all equipment included and the team breaking down the setup and cleaning the service area afterwards. Chafing dishes are $20 each and include disposable stands, water pans, two hours of fuel and serving utensils. The trailer requires 65 feet of clearance, and can be used as a backdrop on full service for an additional fee, subject to permit approval. Ten proteins are offered and ten standard sides; two premium sides and the desserts are priced on request. The business states it does not offer pickup — drop-off catering is delivered. Delivery fees depend on event location and the amount is not published, and no deposit, cancellation policy or minimum spend appears anywhere on the site.
